Aunt Robin’s Ratatouille - Vegan
Simmer in large pot:
2
large can tomatoes, chopped
3¼ tsp. beef
seasoning or
McKay’s
Chicken seasoning
½ tsp. pepper-black OR red
¼ tsp. red pepper flakes
¼ tsp. celery salt
¼ tsp. garlic powder
¼ tsp. thyme
1
tsp. basil
1
Tbsp. sugar
While that simmers cook prepare
according to package directions:
1 large pkg. extra
wide egg noodles or noodles of your
choice
Sauté in large frying pan:
1 lg. onion
1 bell pepper
mushrooms, sliced
3 zucchini,
sliced
1 eggplant, cubed
and cooked 10 min.
Add all together (excluding
Noodles) and serve over noodles in individual glass serving dishes.
Top with cheddar cheese and
broil until melted.

place in sealed containers for later use.
Mix in small sealable
containers:
