Layer Tamale Pie - Vegan
Meat Bottom Layer
Sauté:
1 cup onion, chopped
1 cup bell peppers, chopped
1 20 oz. can Loma Linda Vegetarian Burger OR
Lowfat Vegetarian Burger for Vegan option
Lowfat Vegetarian Burger for Vegan option
2 8oz. cans tomato sauce
1 12oz. can corn, drained
1 clove garlic, minced
1 tsp. salt
2-3 tsp. chili powder
1 tsp. sugar
1 can olives, optional
Pour into greased 9x13 pan or
11x15 pan.
Pour Cornmeal Top Layer over
all and spread smooth.
Cornmeal Top Layer
Cook in saucepan until
thickened:
1½ cup corn meal
1½ cup corn meal
1 tsp.
salt
1 tsp. Butter OR margarine (vegan)
4 cups
cold water
Top with:
1½ -2
cups cheddar cheese, optional - OR Vegan Cheese
Bake at 350 degrees for ~40
minutes until bubbly.
