Ultimate Vegetarian Meatballs

Ultimate Vegetarian Meatballs

Sauté:
2       Tbsp. olive oil
         ½      onion, chopped
         1       clove garlic, chopped
         1       Tbsp. dried parsley or
             2 Tbsp fresh chopped
Soak together:
         ½      cup milk
         3       slices potato bread, crusts removed, cubed
Mix together:
         1       can 19 oz. Vegetarian Burger
         1       egg
         ¼      cup parmesan cheese
         1       tsp. salt
         ¼      tsp. pepper
         1       cup (4oz.) mozzarella cheese, grated
         ½      cup fresh basil leaves, chopped
Gently combine all ingredients.
Shape into 1½” balls and place in a 9x13 baking dish.
Choose a serving option*
Bake at 350 degrees for ~30 minutes.

*Serving options

1. Sprinkle with mozzarella cheese.
2. Cover with 2-3 cups marinara sauce.
3. Sweet Topping - add for the last 5 minutes of baking.
   Mix together desired proportions of:
        Katsup
        Mustard

        Brown sugar
