Vegetarian Tamales

Vegetarian Tamales – Makes 25 large or 50 small


Soak in warm water:
         Corn husks
Mix well, kneed for ~30 minutes:
         8       cups masa
         1½    tsp. salt
         6       cup water
         1       cup oil
Make Sauce:
         1       cup water
         4       Tbsp. flour
         ½      tsp. onion powder
         ½      tsp. garlic powder
         ½      tsp salt
1       Tbsp. butter or margarine
         1       (16oz) can tomato sauce
1       (20oz.) can Rosarita Enchilada Mild Sauce
Make filling:
         1       can Vegetarian Burger or 2½ cups gluten, chopped
         1       lg. onion, chopped fine
         1       tsp. onion powder
         1       tsp. garlic powder
         1       tsp. salt
         ½      tsp cumin
         1       can olives, chopped or 2 whole in each one
         1       cup sauce


Fill corn husks with filling of your choice. Place upright in large double boiler. Steam slowly on low heat for ~2 hours. Eat, refrigerate or freeze.
